4 Easy Steps…HEALTHY WINTER WARMER!

Pumpkin, Chicken & Silverbeet Salad 

This is a regular go-to meal of ours because it’s hot & healthy!

Complete with Protein, Fibre, Phyto Nutrients, Enzymes, Vitamins, this will boost your immune system!

Ingredients:
3 Tablespoons Olive Oil. x1 Onion. x2 Garlic Cloves. 500g Pumpkin. 500g Organic Chicken Breast. 200g Broccoli. 100g Feta. x2 cups chopped Silverbeet. Pine Nuts to Garnish

Preparation:
Chicken – Remove the skin and cut into 3cm portions, cook until tender.
Silverbeet – Discard the bottom stalks and slice leaves into little soldiers.
Pumpkin – Peel and seed the pumpkin, cut into 3cm chunks and boil until tender, but not collapsing.
Broccoli - Cut into chunks, of similar size to the pumpkin.
Onion and Garlic – Dice into small pieces.

Directions:
1. Heat the oil in a large sauté pan over a moderate heat, add the garlic and onion. Cook until the onion is soft and browned.
2. Add the prepared chicken, pumpkin and broccoli over a low heat and stir together with the onion and garlic.
3. Add the silverbeet and season with salt and pepper. Fold through and cover the pan until the silverbeet has steamed through.
4 Crumble the feta over the salad and fold through. Garnish with pine nuts.

Ready to serve!
